This is yet another good one from Mommy's Kitchen. I love this dish! I served it with Beanies and Wienies today for lunch. Beanies and Wienies are just baked brown beans mixed with cut-up hot dogs. The kids really liked them both.
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 8oz. container sour cream - Lite
1/2 cup (1 stick) butter, melted
1 - egg, beaten
1 1/2 cups shredded Cheddar, divided
Preheat oven to 350 degrees. In a large bowl whisk together the egg ans sour cream, then stir together both cans of corn, corn muffin mix, 1 cup of the cheese and melted butter. Pour into a greased 9 inch square casserole dish. Bake uncovered for 60 minutes, or until golden brown. Remove from oven and top with remaining 1/2 cup cheese. Return to oven for 5 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.
