These are SO delicious and a lot healthier than most recipes. You could also make these with ground turkey instead of beef. These will be a new staple in our house!

*Cut this recipe in half if you are only feeding one family.
For Meatballs:
3 pounds ground beef
1 1/2 cups old fashioned rolled oats
1 cup milk
1/2 a 16 oz. bag of frozen organic spinach, thawed and squeezed dry through doubled up paper towels, and chopped in a food processor
1/2 onion, diced
2 eggs
3 teaspoons salt
Plenty of ground black pepper, to taste
For Cooking Meatballs:
approx. 1 cup all-purpose flour (coating for meatballs)
4 T. Organic Butter (you can use canola oil, but I prefer not to)
For BBQ Sauce:
2 cups Naturally Simple Heinz Ketchup
4 T. Sugar (I may reduce this next time)
6 T. Vinegar
4 T. Worcestershire Sauce
1/4-1/2 Onion, diced
2 dashes of Tabasco
Preperation Instructions:
Preheat oven to 350 degrees.
Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet.
Place sheet in freezer for five minutes (not sure why, it didn't really make a difference here).
After 5 minutes, remove meatballs from freezer and immeidately dredge in unseasoned flour.
Brown meatballs in butter or oil until just brown on both sides in a non-stick electric skillet (about 5 minutes on each side). Place browned meatballs into a baking dish.
Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes.
Serve with pasta, rice, mashed potatoes, or one of my favorites....creamy red potatoes in the crockpot (see crockpot recipe tab).
