I have made this bean salsa in the past, but now I have learned how to make it a lot more healthier!This is is a nice cool appetizer to serve on a hot summer day. It is so easy to put together...definitely a favorite in my book.
Recipe from C Love
1 (15 ounce) can black-eyed peas (Eden Organic - bpa free can)
1 (15 ounce) can black beans, rinsed and drained (Eden Organic - bpa free can)
1 (15 ounce) can whole kernel corn, drained (I use frozen corn instead)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (4 ounce) can diced jalapeno peppers (I use a fresh jalapeno instead)
1 (14.5 ounce) can diced tomatoes with sweet onion, drained (Muir Glen Organic - bpa free can)
1 cup Fat Free Zesty Italian-style salad dressing (I used Wild Harvest Organic Rustic Italian Dressing - with no genetically engineered ingredients)
one clove fresh garlic
In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers and tomatoes. Season with Italian-style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors. Serve with Scoop tortilla chips.
No partially hydrogenated oils in these chips, and they are the best Jay and I have ever had!
