Tequilaberry's Salad


This salad is supposedly famous from the Tequilaberry's restaurant once located in Coon Rapids. Unfortunately, the restaurant closed down but this salad is still very popular at many potlucks today. We love this recipe and Jay said it may just be one of his favorite salads I have made yet. The dressing is creamy, but not overly sweet. The bacon, well we all know bacon makes everything good. :) The cauliflower adds the perfect crunch, and you can't go wrong with shredded Parmesan cheese.

Salad:
1 head of lettuce, chopped (I used one bag that contains three Romaine Hearts)
1 head of cauliflower, chopped
1 lb. bacon, cooked and crumbled
1 - 1 1/2 cups Parmesan cheese

Dressing:
1 1/2 c. Hellman's Mayo (do not substitute)
1/3 c. sugar
1/4 c. milk

Whip dressing ingredients together, cover and chill for a few hours at least. Toss dressing with salad and serve immediately. Serves a crowd.
