For some reason I didn't really have high hopes for these bars. I already have so many favorite bar recipes to turn to now, that I just didn't think these would make the list. However, these far exceeded my expectations. The cookie part is moist and chewy, and they taste fabulous! They are definitely another favorite of mine!
Recipe from Mommy's Kitchen
2 sticks of butter, room temperature (1/2 cup)
1/2 - cup brown sugar
1 - cup sugar
3 1/2 - king-sized Hershey’s milk chocolate bars
2 - large eggs
2 - 7 oz jars marshmallow creme/fluff
2- tsp vanilla extract
2 2/3 - cups all purpose flour
1 1/2 - cups graham cracker crumbs
2 - tsp baking powder
1/2- tsp salt
Preheat the oven to 350 degrees. Grease a 9x13 baking pan (you can line your pan with foil for easy removal and cutting if you want). Use an electric mixer to cream together butter and both sugars until light and fluffy. Beat in egg and vanilla. Set aside. Meanwhile, whisk together flour, graham cracker crumbs, baking powder and salt. Slowly add flour mixture to the creamed butter mixture until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 3 king-sized Hershey’s bars should fit perfectly side by side. (I broke pieces from a fourth bar to fit in the cracks.) Spread chocolate with marshmallow creme or fluff. Place blobs of it on the chocolate and then spread it around.
Place remaining dough in a single layer on top of the fluff (I flatten pieces of the dough in my hands and then placed on the top and then pressed the pieces together). Bake for 30 to 35 minutes (You want a nice brown color, but you don't want to over-bake the cookie), until lightly browned. Be sure to cool completely before cutting into bars.
Cool completely before cutting into bars and store in an airtight Tupperware container.
