Cajun Cashews


I came across this recipe this summer. It is a great snack for a party or with a cold beer in the summer. It has just the right amount of spiciness to it and is salty as well.

1 egg white
2 1/2 cups salted cashew halves
1 T. ground Cumin
1 tsp. chili Powder
1/2 tsp. ground ginger
1/2 tsp. cayenne pepper
2 tsp. sugar
2 tsp. course kosher salt
cooking spray

Preheat oven to 300 degrees. Line a 9x13 cake pan with tin foil and spray with cooking spray.
In a medium bowl, whip egg white with 1 tsp. water until frothy.
In a separate small bowl, mix all the spices together and set aside.
Add the cashews to the egg white and toss to mix.
Sprinkle the spices on top of the cashews and toss to coat.
Spread the cashew mixture in one layer on the baking sheet.
Bake, shaking or stirring once to make sure they toast evenly, 30 minutes or until they are crisp.
Remove from the oven and let cool for 10 minutes before placing in a bowl and serving.
