Recipe adapted from C Love
1 pound ground beef (I used 20 oz. of ground turkey)
1 onion, chopped
1 package taco seasoning mix (I made my own seasoning, see below)
2 (16 ounce) cans black beans - no salt added, drained and rinsed (I use Eden Organic, they sell their products in bpa free cans)
1 cup shredded Cheddar cheese (Organic Valley sells a Mexican style shredded cheese)
1 (15 ounce) jar salsa (Muir Glen Organic, mild salsa)
Frozen Corn
Sliced Black Olives (optional)
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch pan; set aside.
Heat a large skillet over medium-high heat and stir in the ground beef/turkey and onions. Cook and stir until the beef/turkey is crumbly and evenly browned. Drain fat. Mix in the taco seasoning with 3/4 cup water, and set aside. **If you are adding your own taco seasoning, just throw it in while the beef/turkey is cooking...no need to add water.
Drain and rinse the black beans and then spread them to cover the bottom of the prepared 9x13 inch pan. Layer the cooked ground beef/turkey and onions, corn and olives evenly over the refried beans. Pour the jar of salsa over the top and spread 1 cup shredded Cheddar cheese over the salsa layer.
Bake in the preheated oven until the cheese is bubbly and the layers are heated through. Serve with whole wheat tortilla shells (Garden of Eatin' sells Organic Whole Wheat Tortillas that are a lot healthier than most whole wheat taco shells) or tortilla chips (Sage Valley sells yellow corn tortilla chips that contain no hydrogenated oils, and they are more tasty than any other chip we have ever tried).
Homemade Taco Seasoning Recipe from Savory Sweet Life
An easy homemade taco seasoning spice blend for 1-pound of ground beef
Ingredients
- 1 tablespoon chili powder
- 1 1/2 teaspoon cumin
- 1 1/2 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon Kosher salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
Instructions
- Mix all the spices together and use it to season one pound of ground beef while cooking. If making for a 20oz. package of ground turkey, you will need to add another half of the ingredients.
