Brown Butter Butterscotch Blondies


I don't need to convince you to make these...the name says it all! If you have not baked with browned butter yet you don't know what you're missing!
Go make these!

My Baking Addiction

1 1/4 cups (2 1/2 sticks) unsalted butter
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
2 cups packed light-brown sugar
1/2 cup granulated sugar
3 large eggs
2 1/2 teaspoons pure vanilla extract
1 12 oz. bag of butterscotch chips

1. Preheat oven to 350 degrees. Grease (with Crisco) and flour a 9-by-13-inch baking pan.
2. Melt butter in a small saucepan over medium heat. Keep an eye on the butter. Melt and cook down the butter until little brown bits appear in the pan. The crackling will subside and butter will begin to brown fairly quickly after that. Keep a close eye as it could easily burn. Remove from heat and pour into separate bowl to stop the browning. Whisk together flour, baking powder, and salt.
3. In the bowl of an electric mixer, combine browned butter and both sugars.  Beat for a few minutes.  Allow the butter to cool a bit before adding eggs.
4. Add eggs. Using the paddle attachment, beat on medium-high speed until light and fluffy, about 3 minutes. Add vanilla, and beat to combine. Add flour mixture until thoroughly combined. Fold in butterscotch chips and pour into prepared pan.
5. Bake in preheated oven until a cake tester inserted in the center comes out clean, 35 to 40 minutes (do not overbake). *I baked mine for 45 minutes.
6. Cut blondies into 3-inch squares.
