
My good friend, C Love gave me this recipe. This recipe called for Velveeta which really appealed to me. It turned out great and very creamy. It pairs nicely with a grilled sandwich on a cold fall or winter day.
1/3 c. butter
1 onion, chopped
32 oz. frozen chopped broccoli
4 (14.5 oz) cans of chicken broth
1 (1 lb.) loaf of Velveeta Cheese
2 c. skim milk
3/4 tsp. garlic powder
2/3 c. flour
salt and pepper to taste (I usually wait on the salt and pepper until it is served)
In a large pot, melt butter over medium heat. Cook onion in butter until tender. Stir in broccoli and cover with 3 cans of chicken broth. Simmer until broccoli is tender, 10 - 15 minutes. Reduce heat and stir in cheese cubes until melted. Mix in milk and garlic powder. In a small bowl, stir flour into 4th can of chicken broth until dissolved. Stir flour mixture into soup, cook, stirring frequently, until thick. Serve hot.
