Caramel Chex Snack Mix


This has been our family's favorite snack mix for many years now. I got the recipe from a friend of my sister's. I think it is perfect mixed with peanut and regular M&M's, but you can add whatever you please. This is definitely a favorite among the kids too. This week we played BINGO and used this snack as our markers! :)

***I strongly encourage you to halve this recipe. If not, you will have two very large containers of this mix.

1 lb. Butter
3 Cups Brown Sugar
3/4 Light Corn Syrup
2 14 oz. Boxes of Corn Chex
1 1/4 tsp. Baking Soda
1 1/2 tsp. Vanilla
Regular and Peanut M&M's

Pour cereal in a doubled up paper grocery bag. Melt butter, brown sugar and corn syrup in pan. Bring to a boil, and let boil for about one minute. Remove from heat and add baking soda and vanilla, and stir. Pour sauce over Chex cereal in doubled up grocery bag and shake. Microwave on full power for a total of six minutes, shaking every 2 minutes. Cut bag apart and spread cereal to cool. Once cool, break apart clumps and place in airtight container, and add M&M's.
